Foundation

Building the framework for a lifetime of wine enjoyment, the Foundation Course is designed to provide an in-depth overview of major grape varieties and their regions, in addition to a focused introduction to tasting and sensory analysis. The 6-week course also covers key concepts of grape-growing and winemaking. The goal is to expose students to the impact of climate and soil on a grape’s expression in the glass, in a fun and engaging atmosphere.

Each 2-hour lecture is paired with eight wines that best illustrate the class focus.

Students range from beginners with an interest in developing their understanding of wine to individuals who wish to refresh their knowledge before enrolling in the the VITI Series.

    Graduates of Foundation

    • Have a basic understanding of winemaking, grape growing, the major grapes and wine growing regions
    • Understand differentiating characteristics of Old World and New World styles
    • Have confidence in tasting and analysis procedures
    • Discover a rich and rewarding discipline and often find themselves wanting to learn more

    Course Outline

    1. Introduction to Tasting, Viticulture & Vinification: learn how to taste like a pro, plus how grapes are grown and wine is made
    2. Red Grape Varieties: a side-by-side comparison of six different red wines and, through them, the regions in which they are grown
    3. White Grape Varieties: a side-by-side comparison of six different white wines and, through them, the regions in which they are grown
    4. Sparkling Wine: a primer on the different styles of Champagne and sparkling wines from around the world
    5. Old World vs. New World White Wines: a comparative tasting of New World wines and Old World benchmarks of the same variety
    6. Old World vs. New World Red Wines: a comparitive tasting of New World wines and Old World benchmarks of the same variety

    Tuition

    $300.00 for the full Course (graduates receive a certificate of completion for attending all classes)
